Lovely 'Jub-ilee' Brace's Recipes

With communities across Wales gearing up for Jubilee celebrations, the nation has gone baking mad, making Brace’s Bakery’s products ideal for tea party treats.
Emma Morgan, Bakery Manager at the Crumlin-based bakery, recommends her raspberry jam Welsh cake trifle, which uses a Welsh cake base in place of sponge fingers, as the perfect Union Jack-inspired centrepiece to any tea party table.
She has also created a scrummy Jubilee Chicken variation on the more traditional Coronation Chicken and suggests swapping the usual scones in a cream tea for Brace’s jam Welsh cakes filled with lashings of fresh cream and topped with red and blue berries or edible coloured sugar balls.
Brace’s bread is always delicious, but when filled with the best of British sandwich fillings like Cheddar cheese and Piccalilli, egg mayonnaise and cress and British beef and horseradish, they are hard to resist. Simple cucumber or strawberry jam finger sandwiches are the ideal cream tea accompaniment to Emma’s pretty creamed Welsh cakes.

RASPBERRY WELSH CAKE TRIFLE
• 1 packet of Brace’s Raspberry Welsh Cakes
• 400g packet of frozen or fresh raspberries defrosted
• 100g icing sugar
• 200ml double cream
• 300g ready made custard
• 25g meringue, crushed
1. Cut the Welsh cakes in half and arrange in the bottom of a 1ltr glass bowl.
2. Put the raspberries in a pan, cover with a lid for 5 minutes. Stir and cook uncovered for 5 minutes. Stir in the icing sugar, then leave to cool.
3. When cool, spoon over the Welsh cakes and refrigerate for 1 hour.
4. Whip the cream until it forms soft peaks, then stir in the custard. Spoon over the raspberries and chill for 1 hour or until needed.
5. Lay the fruit and white meringue out in the stripes of the Union Jack flag.

JUBILEE CHICKEN SANDWICH
Serves: 8
• 4 skinless, boneless chicken breast fillets – packet prepared chicken slices
• 1 stalk celery, chopped
• 1 onion, chopped
• ½ red pepper diced
• 1 small apple - peeled, cored and chopped
• 50g (2 oz) sultanas
• 50g (2 oz) seedless green grapes, halved
• 1/8 teaspoon freshly ground black pepper
• ½ teaspoon curry powder
• 175g (6 oz) mayonnaise
In a large salad bowl combine the chicken, celery, onion, apple, raisins, grapes, pepper, curry powder and mayonnaise. Mix all together, tossing to coat and spread across slices of Brace’s medium wholemeal bread.

JUBILEE RASPBERRY WELSH CAKES
• 1 packet of Brace’s Raspberry Welsh Cakes
• Pot of double cream
• Red, blue and white sugar balls or hundreds and thousands
• Strawberries and blueberries to decorate
Whip cream until thick. When it stands in peaks, gently ease open the Welsh cakes and fill with piped cream. Pipe cream onto the top of each Welsh cake and top with red, white and blue sugar balls.
