A Spell on you brew, with witchy hat croutons

Serves 6

This is a fun dish to make for Halloween. Get the children involved in the preparation, they will love it, and it’s a great way to get them eating vegetables!

Ingredients

6 Braces white or wholemeal rolls
3 medium slices of Braces bread
BREW-
75g sweetcorn
75g frozen peas
1 medium carrot peeled and finely chopped
1 small leek, cleaned and chopped fine
300ml vegetable stock
150ml skimmed milk
½ tsp sea salt
White pepper
1 bay leaf
50g fine noodles
Olive oil
A few chives for garnish
1 dessertspoon arrowroot or cornflour mixed with a little water

Instructions

Heat the stock and milk together, add the bay leaf together with the vegetables. Cook until tender, break up the noodles (worms) and add to the pan. Thicken with the arrowroot or cornflour, stirring constantly until thickened.
To make the soup cauldrons, slice off the top and hollow out, place on a baking tray and bake in a preheated oven gas mark 5/180c/325f for about 10 minutes until dry to the touch. Using the point of a knife, cut out witch hat shapes from the slices of bread, bush lightly with olive oil and bake in the oven with the cauldrons until golden.
To serve, place a cauldron on a saucer or small plate, fill with the brew,
top with a hat and garnish with a few chives (green spider legs).
