This is a brilliant recipe packed full of seasonal goodness and energy. The ingredients are also great served up as a salad to accompany a dish or just eaten on its own.

Ingredients

4 Braces white or wholemeal rolls
4 thin slices of lean ham
4 thin slices of half fat cheese
¼ red cabbage, finely shredded
¼ white cabbage, finely shredded
1 tablespoon chopped chives or 1 small red onion diced fine
1 celeriac, trimmed and finely grated
1 eating apple, cored and chopped
2 tablespoons chopped nuts
1 dessertspoon sesame seeds
250g butter beans
Black pepper
Squeeze lemon juice
1 clove garlic peeled and chopped
1 dessertspoon olive oil
1 teaspoon mild curry paste
DRESSING-
3 tablespoons Greek yoghurt
1 tablespoon low calorie mayonnaise
Squeeze of lemon juice
1 teaspoon runny honey

Instructions

Slice each bread roll into three rounds. Place the cabbage, chives, celeriac, apple, nuts and sesame seeds in a mixing bowl. Mash together the beans, lemon juice, garlic, olive oil and curry paste and add to the salad mixture. Mix together all the ingredients for the dressing and add to the salad. Mix well and then layer up between the slices of roll, topping one layer with ham, and the other with cheese. Secure with a cocktail stick and serve.
