Toffee apples welsh cakes
Ingredients
8 Braces Welsh cakes
5 apples, peeled and cored
50g butter
Juice and zest of an orange
A pinch cinnamon, 2 cardamom pods and a little vanilla
100g soft brown sugar
Greek yoghurt to serve
Lemon balm to garnish
Instructions
Cut 2 of the apples in half, and slice the rest. Melt the butter in a large frying pan, add the spices and vanilla together with the sugar. Add the orange zest and juice and stir the mixture until the sugar is melted. Add the apples and turn up the heat. Cook until the small slices are soft, remove with a slotted spoon. Place 4 Welsh cakes on a baking tray, top with the apple slices and place another Welsh cake on top, bake in a preheated oven gas6/200c/400f for 10 minutes .
Continue cooking the halves of apple until soft. Remove the Welsh cakes from the oven, plate and top with the apple halves. Spoon over any remaining sauce and serve with a spoon of Greek style yoghurt, garnish with lemon balm or mint.
