Welsh rarebit with bara brith

My grandmother use to serve cheese with bara brith and it was delicious. The richness of the fruit is a perfect match for a good mature flavoured cheese. This recipe takes things a little further using another old family favourite Welsh rarebit as a topping for this traditional Welsh tea bread.
Ingredients
100g low-fat cheese, grated
2 tablespoons skimmed milk
1 medium size egg
½ teaspoon Dijon mustard
8 slices Braces bara brith
1 large eating apple
Instructions
Gently melt the cheese in a heavy based pan together with the milk. Remove from the heat and beat in the egg, stir in the mustard and leave to cool. Toast the bara brith on one side, divide the rarebit mixture between the slices, and spread evenly. Toast under a hot grill until golden. Serve with slices of apple.
