All-in-one brunch in a bap with tomato relish

This recipe is a real energy fixer - great at any time of day. I make it frequently because I can have a bit of everything without over-indulging.
Ingredients
4 Brace's Brecon Baps
2 low-fat sausages
2 slices lean back bacon
3 mushrooms, chopped
6 cherry tomatoes
4 medium eggs
100ml semi-skimmed milk
One-cal spray oil
Freshly ground black pepper
1 tablespoon freshly chopped parsley
Relish:
12 cherry tomatoes
2 spring onions, trimmed and sliced
1 teaspoon runny honey
50ml water
1 teaspoon tomato purée
Freshly ground black pepper
Instructions
Preparation time: 15 minutes
Cooking time: 25 minutes
Cut the sausages into bit-size pieces. Trim any excess fat from the bacon and cut into strips.
Spray a non-stick frying pan with a little one-cal oil. Add the sausage pieces, cook for five minutes and then add the bacon.
When the sausage and bacon have browned, add the mushrooms and tomatoes and cook for a further three minutes.
Beat the eggs and milk together, season with black pepper and pour into the pan over the ingredients. As the egg starts to set, ease the edge away from the side of the pan to allow uncooked egg to run in.
When almost cooked, sprinkle the chopped parsley over the top, reduce the heat and cover with a lid or plate. Meanwhile, make the relish.
Cut the tomatoes in half and place in a small saucepan with the water and spring onions; cook for five minutes. Stir in the honey, tomato purée and finish with a little black pepper.
Slice the Baps in half. Cut the All-in-One Brunch into eight pieces; serve two of the portions across the base of each Bap together with some relish on the side of the plate.
