Cheesy soldiers with sweet pea dip
Serves 4
This is a healthy version of cheese on toast and it has a fabulous, creamy texture. The topping can be varied by adding a little lean chopped ham, some sliced mushrooms or tomatoes.
Ingredients
Preparation time: 10 minutes
Cooking time: 6 minutes
2 medium slices of your favourite Brace’s bread
100g extra low-fat cream cheese
1 medium egg
½ teaspoon finely chopped chives
Dip:
200g cooked peas
½ red chilli
2 cloves garlic, peeled
Juice of 1 lime
1 small bunch mint or coriander
2 dessertspoons Greek yoghurt
Instructions
Toast the bread under the grill on one side. Mix the cream cheese, egg and chives together and spread over the un-toasted side of the bread. Now for the dip. Put all the ingredients in a blender and process to form a smooth paste; spoon into four small pots or directly on to serving plates. Grill the cheesy side of the bread until golden. Cut into soldiers and serve with the dip.
