Garlic and herb breadsticks with chickpea and basil dip

These are a delicious snack and are great with a bowl of soup or a healthy salad. They also make a brilliant party dish - serve them with a mix of homemade, low-fat dips and just watch them vanish.

Ingredients

4 thick slices of your favourite Brace's bread
4 tablespoons olive oil
1 large clove garlic, grated
25g mature flavoured, low-fat cheese, grated
Handful fresh basil
Handful fresh parsley
One-cal spray oil

Dip:

200g cooked chickpeas
1 dessertspoon tomato purée
1 tablespoon reduced calorie tahini
Handful fresh basil
Juice of 1 lemon
2 tablespoons Greek yoghurt
Freshly ground black pepper

Instructions

Preparation time: 20 minutes
Cooking time: 5 minutes

Preheat the oven to gas mark 6, 200c, 400f. Pour the olive oil into a bowl and add the garlic. Chop the herbs until they are almost a paste, mix with the oil and add half the cheese. Brush the mixture over both sides of the bread and cut each slice into eight sticks. Spray a little one-cal oil onto a baking sheet, spread the sticks out on it and sprinkle the remaining cheese over them; bake until golden. Meanwhile, make the dip. Simply place all the ingredients in a blender and process to form a smooth paste. Spoon into serving pots and serve with the breadsticks.
