Warm welsh cakes with summer berries

Brace’s Welsh Cakes are such a handy ingredient – it’s a good idea to keep a packet or two in the cupboard or freezer. Warming the Welsh Cakes revives the delicious buttery flavour and if you use the Raspberry Jam filled variety, the centres become irresistibly squidgy!

What do you need?
8 Brace’s Welsh Cakes – Traditional or Raspberry Jam variety
450g mixed summer berries
Zest of 1/2 an orange
1 tablespoon icing sugar
2 tablespoons Black Mountain Liqueur or similar
150ml double cream
Fresh mint to garnish
Let's make it
Mix together the summer fruits, orange zest, sugar and liqueur in a bowl and leave for 10 minutes. Whip the double cream to form soft peaks. Warm both sides of the Welsh Cakes over a low heat in a large frying pan. Put the summer fruit mixture in a pan and warm gently. Put the Welsh Cakes on a serving plate, spoon the fruit mixture over them, top with the cream and garnish with mint.
