Baked Pear with Blackberry

I love desserts, but oh how they love my waistline! Coming up with healthy options has meant that they can be part of my daily diet. This recipe light and packs in plenty of fruit. The same recipe can be varied throughout the year by improvising with seasonal fruits.
Ingredients
100g white breadcrumbs
1 medium size egg
100ml skimmed milk
1 teaspoon grated lemon zest
¼ teaspoon ground cinnamon
¼ teaspoon ground mixed spice
PEARS
2 pears, peeled
150ml unsweetened apple juice
1 tablespoon honey
1 piece lemon peel
1 bay leaf
100g blackberries or orange segments
Instructions
Place the breadcrumbs in a mixing bowl, add the zest, spices and sugar. Beat the egg with the milk and mix into the breadcrumbs. Divide the berries between four ramekins or something similar, and top with the bread mixture. Pour the apple juice into a saucepan, add the pears together with the honey, lemon peel and bay leaf. Cover and bring to the boil, reduce to a simmer and cook the pears until soft, turning them at regular intervals to ensure even cooking.
Place one pear on top of the bread mixture, spoon over some of the sauce and bake in a moderate oven for 15 minutes. Serve warm with a little Greek yoghurt if you wish.
