Brace yourself sandwich

Serves 4

There's nothing like a good sandwich as a quick snack solution. This idea just encourages you to think about getting the balance right with the filling, and how to maximise positive energy from your food.

Children can make their own version supplementing a little tomato puree in place of the mustard, and maybe some chopped gherkin in place of the olives.

Ingredients

2 slices of your favourite Brace's bread
1tsp of very low fat mayonnaise
1tsp low fat yoghurt
¼ tsp mild mustard
2 large lettuce leaves, shredded
1 small carrot, shredded
1 tomato, sliced
3 pitted olives, chopped (optional)
1tsp chopped herbs- parsley, chives, dill or basil
50g cooked lean ham or chicken, or tuna, salmon or a boiled egg
Salt and pepper

Instructions

Simply mix together the mayonnaise, yoghurt, mustard and olives. Use half the mixture to thinly spread over the slices of bread. Mix the rest with the lettuce and carrot and spoon this onto the base slice. Top with the tomato and herbs and season. Finish with your choice of meat, fish or egg. Top with the second slice of bread, press down lightly and cut in half and enjoy.
