Garlic Toasts with Warm Tomato Salsa
Serves 4
This is such a simple dish – rich in vitamins, minerals and it will give you a great energy boost. For a change, try some chopped, roast peppers in the mixture; they add a natural sweetness and even more goodness.
Ingredients
4 large tomatoes
1 clove garlic, grated
2 spring onions, chopped
Juice of 1 lime
Sea salt and black pepper
1/2 medium size chilli, chopped and seeds removed
2 tablespoons fresh coriander, chopped
Toasts:
4 thick slices Brace’s white or wholemeal bread
2 medium cloves garlic, peeled
1 tablespoon olive oil
Instructions
Preparation time: 10 minutes Cooking time: 5 minutes
First, make the salsa. If you don’t like tomato skin, boil a kettle of water, pour into a heatproof bowl and add the tomatoes. Leave for about a minute, remove and with a knife, pierce the skin and it should peel off easily. Chop the tomatoes and place in a mixing bowl. Add the spring onions, chilli, lime juice and garlic. Stir in the coriander and season with sea salt and plenty of ground black pepper. To make the toasts, lightly brush both sides of the bread with olive oil. Grill until golden and then rub both sides with garlic. Cut into fingers or small triangles and either serve the salsa on top of the toasts or separately in a little pot.
