Little caesars

Caesar salad basket

Serves 4

This is a great way to get you and your children to eat more salad. Encourage them to help with preparations in the kitchen. Get them to make the baskets and the filling, adding in a few more interesting salad ingredients they may like, or want to try. These also go really well as a side dish when having a barbecue or buffet.

Ingredients

4 medium slices of white or brown Brace's bread, crusts removes
A little oil for garnishing
2 Little Gem lettuce, or the equivalent in lettuce leaves, shredded
6 mangetout or sugar snap peas, shredded
¼ cucumber, peeled and deseeded
4 tsp low fat cottage cheese, or use a full flavoured half fat cheese grated

DRESSING

Juice of ½ a lemon
½ tsp runny honey
½ clove garlic finely chopped
1dsp chopped chives or finely chopped spring onion tops
1tbsp low-fat yoghurt
Chives for garnish
Salt and pepper

Instructions

Take the 4 slices of bread and using a rolling pin roll each slice until really thin. Brush lightly with oil on both sides, ease each slice into a muffin tin mould. Bake in a preheated oven gas mark 7/425f/220c for about 10 minutes until golden. Meanwhile assemble the salad. Place the lettuce leaves in a mixing bowl, add the shredded beans or peas, cucumber and mix well. Make the dressing by simple whisking together all the ingredients, taste to check seasoning and pour over the salad. Mix well and divide between the cooled bread baskets. Top with a little cheese and some chives.
