Picnic baps
Serves 4
These are the perfect take-away for a day out. One of these Picnic Baps is a complete meal in itself and has the perfect nutritional balance. Of course you don’t have to go on a picnic to enjoy it; lunchtime – anytime – they are all great times.
Ingredients
4 Brace’s Big Baps
200g cooked tuna and 4 anchovies or use the equivalent of cooked ham or chicken
1 Cos or Iceberg lettuce
2 boiled eggs, shells removed, chopped or sliced
4 spring onions, trimmed, rinsed and chopped
12 olives
4 tomatoes, cut into wedges
1/2 cucumber, chopped
Olive oil
Lemon juice
Sea salt and black pepper
Instructions
Preparation time: 10 minutes Cooking time: 7 minutes
Preheat the oven to gas mark 6, 200c, 400f. Slice off the top of the Baps and hollow out; use the bread for making breadcrumbs and freeze. Place the Baps and their lids on a baking tray and bake until golden. Now prepare the filling. Rinse, drain and break up the lettuce and put in a mixing bowl. Add the egg, spring onions, olives, tomatoes and cucumber. Drizzle with olive oil, a squeeze of lemon juice, season well and mix thoroughly. Break up the fish or meat and add to the mixture. Divide the filling between the Baps and top with a lid. Wrap each one in foil and weigh down in the fridge with a tray. If going on a picnic, remember the cool box.
