Queen of hearts tarts

This recipe is great for children – simple ingredients, results that are effective and delicious – just right to encourage them to try more. The fruit can be varied; the soft fruits such as raspberries, blueberries and redcurrants tend to work best and are the most appealing.

Ingredients

12 medium slices Brace's white bread
6 teaspoons low-sugar fruit spread
3 strawberries
Icing sugar for dusting

Instructions

Preparation time: 15 minutes Cooking time: 15 minutes

Preheat the oven to gas mark 5, 190c, 375f.
Cut a circle from each slice, using a large pastry cutter. Use the trimmings to make breadcrumbs and freeze to use in another recipe.
Spread a little of the fruit spread on six circles and place them on a baking sheet.
Cut out a small circle from the middle of the remaining six circles. Place them on top of the fruit circles, brush with a little water, dust with icing sugar and bake for 12 - 15 minutes, until crisp and golden.
Remove from the oven and leave to cool. Spoon the remaining fruit spread into the hole in the middle, slice the strawberries and arrange on top.
Dust with a little icing sugar and enjoy.
