Strawberry baskets
Makes 4
The perfect recipe for ripe, summer berries. This one uses strawberries because they are naturally sweet, very nutritious and children love them. Try an alternative with a mix of fruits and a little fruit sauce.
Ingredients
4 medium slices Brace’s white bread, crusts removed
200g fresh strawberries
1 tablespoon lemon juice
1 tablespoon water
1 teaspoon caster sugar
1 dessertspoon icing sugar
Instructions
Preparation time: 15 minutes Cooking time: 12 minutes
Preheat the oven to gas mark 6, 200c, 400f. Roll out the four slices of bread until really thin. Mix the lemon juice, water and caster sugar together. Brush a little of the liquid over both sides of the slices of bread. Ease the slices into four muffin tin moulds. Place in the oven and bake for 12 minutes, until golden. Remove the baskets from the oven and leave to cool. Rinse the strawberries and remove the green tops; if the strawberries are large, cut them into smaller pieces. Dust the outside of each basket with icing sugar. Fill the baskets with strawberries and dust the tops with the remaining icing sugar.
