Sticky bara brith pudding
Serves 4
Who would have thought that traditional Bara Brith would be such a superb ingredient? I love this dessert; it's so simple and really satisfying. The sauce is luxuriously sticky and serving it with fresh fruit gives a perfect balance to the flavours.
Preparation time: 5 minutes
Cooking time: 15 minutes
What do you need?
8 slices Brace’s Bara Brith
Sauce:
25g butter
50g molasses sugar
½ teaspoon cinnamon
Juice of an orange plus some of the zest
Garnish:
1 orange, sliced
2 fresh figs
Let's make it
Melt the butter in a large frying pan. Add the sugar and melt over a medium heat. Add the cinnamon, orange juice and zest, stir and continue to cook for five minutes.
Remove from the heat and carefully dip the slices of Bara Brith into the sauce and then place two on each of the serving plates.
Top with a couple of slices of the orange and ½ a fig. Pour the remaining sauce over the Bara Brith and serve with a little Greek yoghurt.
